Let's Get This Blogging Started :p!


Well, here goes nothing....my first blog attempt :)!

Today, was Pre-school day but the boys are just getting over an eye/ear infection and so I thought another day at home would be good. The idea of staying home from Pre-school was not a well liked one, because my 5 year old was going to miss seeing his little girlfriend. He was quite upset by this, and told me that if he didn't go she might find someone else! I explained to him that we didn't want to give his little girlfriend this eye/ear infection, because that is more of a reason for her to find someone else than him not showing up at pre-school. He just laughed, and told me that I was a silly mommy!

While the boys were playing with blocks, Maiah was having a sleep (mmmm....sleep, oh how I miss it) I found a cookbook that I haven't used in a ong time...or perhaps at all. I made "Apple Pie Muffins", sounds kinda nasty...but my oh my they are good. Here's the recipe for them and a picture :)!


Here is the recipe:

2 1/4 c. all purpose flour

1 1/2 c. packed brown sugar

1tsp. baking soda

1/2 tsp salt

1 egg

1c Buttermilk (1 tbsp. vinegar into a measuring cup, and add enoug milk to make one cup...let stand for 5-10 min.)

1/2 c. butter melted

1 tsp vanilla

2 c. diced peeled apples


topping:

1/2 c. packed brown sugar

1/2 c. chopped walnuts or pecans

1/3 c. all purpose flour

1 tsp cinnamon or nutmeg

2 tbsp butter melted

  • Topping: In a small bowl, stir together brown sugar, pecans/walnuts, flour and cinnamon/nutmeg. Drizzle butter over it, toss with fork...set aside.
  • In a large bowl, combine flour, sugar, baking soda, ans salt. Whisk together egg, buttermilk, butter, and vanilla; pour over dry ingredients. Sprinkle with apples;stir just until dry ingredients are moistened.
  • Spoon into large greased or paper-lined muffin cups;sprinkle with topping. Bake in 375 degree oven for about 25 minutes or until tops are firm to touch.
  • Makes 16-18 muffins.

Glad to see you're up and running... soon you'll be as addicted as the rest of us! lol :) You're off to a great start. Can't wait to keep checking in to see what's going on with you guys!

Alexandria certainly missed 'her' Isaac at pre-school today, too. We got there this morning...a bit late as per usual...yeah, ok we were the among the last ones there...and she looked over at Issac's coat hook and saw it was empty and started to get sad that her fiance wasn't there! Oh, young love...funny that these are 5 year olds and they carry on like this!

I'm gonna have to try that muffin recipe...looks awesome! :)
